In this recipe, we will be making vegan lasagna soup. It is completely vegan. But it is great for multi diet families since you can easily add some grated cheese or meatballs.
Ingredients
- 3 tablespoons olive oil
- 1 onion
- 3 cloves garlic
2 tablespoons tomato paste1 teaspoon dried basil1 teaspoon dried oregano- crushed tomato 795 g
- vegetable broth 1.5 L
- green lentils rinsed 50 g
- lasagna uncooked 225 g
- spinach 120 g
Steps
- Dice the onion, mince the garlic and rinse the green lentils.
- You will want to start by cooking the green lentils in boiling water for about 15 minutes.
- Then in a large soup pot, add the olive oil and let it heat up.
- Next, put the onions in the pan and let simmer for 4 minutes
- Now add the basil, tomato paste, oregano and garlic to the olive oil and let simmer for 3 more minutes.
- Separate the lentils from the water and add them to the pot together with the crushed tomatoes and vegetable broth.
- Now leave the pot on a medium fire for 10 minutes.
- Break apart the lasagna into parts, the size is your own choice.
- Add the lasagna and cook for 10-15 more minutes.
- know you can turn off the fire and add the spinach right before serving so that it does not become too soggy.
